Try this fresh, colorful Southwest Chicken Salad with a kick for your next lunch date.  This quick and easy recipe is packed with nutrients, takes just 15 minutes to prepare and is less than 200 calories per serving.

Southwest Chicken Salad
INGREDIENTS
For the salad
2c cooked chicken diced
1c tomato chopped
1/2c green onions chopped
1 can corn, drained
1/2c Cheddar cheese, shredded
1/2c black beans drained and rinsed
6c mixed salad greens
*tortilla chips (optional)
For the Dressing
2/3c. fat free sour cream
1/2c picante sauce
1 teas chili powder
1/2teas grd cumin
INSTRUCTIONS
  1. In a large bowl mix cooked chicken, tomato, green onions, corn, cheese, black beans, and salad greens.  
  2. In a separate bowl, combine sour cream, picante sauce, chili powder, and cumin.
  3. Gently mix salad with dressing and serve.
  4. *Optional: Top salad with crushed tortilla chips
